Mmmm, the perfect lunch at Jazz Fest, the famous fried soft shell crab po-boy. They take a whole crab, caught just after they shed their shells and before the new one gets in place, and fry it up in tasty cajun seasonings (of course) add french bread, pickles, crystal hot sauce (or tabasco) and lemon and enjoy.

This is one of the few types of food at the fest that requires a ticket purchase to get. You find one of these guys give him multiples of $9 and get tickets back. Then bring to booth and enjoy. Unfortunately this means you have to wait in two lines (why they can't be normal I don't know).

One more pic of the po-boy, while adding some lemon butter sauce for extra umf.
