Jazz Fest Food Porn: Traditional creole Calas

While in the Grandstand, I came across a couple cooking demostrations. Both were sponsored by Zatarain's. One told you the best way to cook game (deer, duck, etc) and the other was a traditional Creole Calas demostration. The Calas demo ended with free food for the watchers and I was given a perfectly fried up rice and dough ball covered in powered sugar. The taste was better than a beignet and forced me to find you a recipe (via NolaCuisine.com) as well as snap some food porn shots for this post. Enjoy and try not to drool on the keyboard.
